Brown Rice Salad And Cashew Nuts
225 g/8 oz brown rice, well rinsed
salt
3 spring onions, finely chopped
1 red pepper, cored, &seeded and roughly
chopped
50 g/2 oz raisins
50 g/2 oz cashew nuts, roasted and chopped
2 tablespoons chopped parsley
6 tablespoons soy sauce dressing
Cook the rice in boiling salted water for about 40 minutes until tender. Rinse, drain well and cool.
Place in a bowl and add the remaining ingredients. Toss thoroughly before serving. SERVES 6
