Beetroot And Orange Salad


450 g/1 lb raw beetroot, peeled
2 oranges
4 tablespoons lemon vinaigrette dressing
1 tablespoon chopped parsley


Grate the beetroot finely and place in a salad bowl. Finely grate the orange rind and mix with the dressing. Peel the pith from the oranges, break into segments, discarding the membrane, and chop roughly. Mix the orange pieces with the grated beetroot.


Place in a serving bowl, pour over the dressing and toss thoroughly. Sprinkle with the chopped parsley to serve.


SERVES 4 to 6
