Apple And Celeriac Salad


750 g/1 1/2 lb celeriac
3 tablespoons plain low-fat yogurt
2 tablespoons reduced-caloric mayonnaise
1 tablespoon finely chopped chervil or borage
1 tablespoon finely chopped parsley
2 crisp red dessert apples, cored and thinly sliced
into rings
100 g/4 oz cashew nuts, finely chopped


Put the celeriac into a saucepan and cover with water. Bring to the boil, lower the heat and cook for 15 minutes. Drain thoroughly, allow to cool, then peel and cube.


Mix together the yogurt, mayonnaise, chervil or borage and parsley. Add the apple slices to the yogurt mixture with the celeriac. Stir to coat and transfer to a salad bowl. Sprinkle the nuts over and serve
