Turkey Portugaise


4 x 100 g/4 oz turkey fillets
1 clove garlic, peeled and crushed
2 tomatoes, roughly chopped
1 carrot, peeled and very thinly sliced
25 g/1 oz chopped onion
salt
freshly ground black pepper
watercress sprigs, to garnish


Place each turkey fillet on a piece of foil large enough to cover it. Spread a little crushed garlic on each one. Divide the tomato, carrot and onion between the fillets. Sprinkle over salt and pepper.


Wrap the fillets completely in foil and cook in a preheated hot oven (220 °C/425 °F, Gas Mark 7) for about 20 minutes until tender.


Serve in the packages with a tomato or green salad and garnished with watercress.
