Turkey Nut Loaf


1 medium onion, peeled and finely chopped
100 g/4 oz shelled walnuts, chopped
750 g/11/2 lb raw turkey meat, minced
175 g/6 oz wholemeal breadcru nibs
1 tablespoon Worcestershire sauce
1/2 teaspoon chopped fresh mixed herbs or
1/4 teaspoon dried mixed herbs
1 tablespoon chopped parsley
1 egg
salt
freshly ground black pepper
Garnish:
1 x 425 g/15 oz can unsweetened apricot halves,
drained
stuffed olives, sliced
lettuce leaves


Blend all the ingredients together with plenty of salt and pepper. Spoon the mixture into a well-greased I kg/2lb loaf tin and cover with greased foil. Bake in a preheated moderate oven (180 °C/350 °F, Gas Mark 4) for 11/2 hours. Cool in the tin for 30 minutes, then turn out and allow to become quite cold.


Arrange some of the apricot halves over the top of the loaf. Any left over can be added to a salad to serve with the loaf. Place the olives on the top edges of the loaf. Garnish with lettuce.
