Turkey Mornay
225 g/8 oz turkey breasts
lemon juice for basting
25 g/1 oz polyunsaturated margarine
1 tablespoon plain unbleached white flour
300 ml/1/2 pint skimmed milk
50 g/2 oz Cheddar cheese, grated
salt
freshly ground black pepper
Place the turkey breasts on the grid of a grill pan and spoon over a little lemon juice. Put under a hot grill for 2(1 minutes, turning occasionally. If necessary, spoon over inure lemon juice.
Meanwhile, melt the margarine in a saucepan and stir in the flour. Cook for 2 minutes, stirring.
Remove from the heat and stir in the milk. When blended, return to the heat, bring to the boil and simmer gently for 2 minutes, stirring continuously. Add the grated cheese and salt and pepper and stir until the cheese has melted.
Cut the cooked turkey breasts into small portions and place on a heated serving dish. Pour the sauce over and serve with a salad.
