Turkey Milanese
350 g/12 oz cooked turkey meat
100 g/4 oz pasta
salt
1 x 225 g/8 oz can artichoke hearts, drained
2 teaspoons chopped fresh oregano or
1 teaspoon dried oregano
freshly ground black pepper
Cut the turkey into bite-sized pieces.
Put the pasta in a saucepan of boiling salted water and cook for about 10 minutes until just cooked but still firm. Drain and return to the saucepan.
Add the turkey, drained artichoke hearts and herbs to the pan and place over a gentle heat, stirring, until thoroughly heated through. Taste and adjust the seasoning, if necessary, then transfer to a heated serving dish.
