Mushroom Chicken Casserole
4 x 175 g/6 oz chicken pieces
175 g/6 oz mushrooms, wiped and trimmed
25 g/1 oz chopped onion
250 ml/8 fl oz chicken stock
salt
freshly ground black pepper
Skin the chicken and place in a casserole with the mushrooms, whole if small or sliced if large.
Add the chopped onion, stock and salt and pepper. Cover and cook in a preheated hot oven (220 °C/425 °F, Gas Mark 7) for 35 to 40 minutes or until the chicken is tender (when pierced with a sharp knife the juices run clear). Serve immediately while piping hot.
