Gingered Kebabs
225 g/8 oz dried apricots
1-2 teaspoons ground ginger
4 x 100 g/4 oz turkey fillets
Place the apricots in a bowl. Just cover with water and add the ground ginger. Leave the apricots to stand overnight.
Place the turkey fillets on the grid of a grill pan and spoon over a little of the apricot soaking liquid. Put under a hot grill for about 10 minutes, turning once. If necessary, spoon over more apricot liquid.
Meanwhile, simmer the apricots in the rest of
the soaking liquid for about 1(1 minutes. Pour the cooked apricots into a blender and liquidize them until smooth.
Place the cooked turkey fillets on a heated serving dish and pour the apricot sauce over. Serve with green beans.
