Curried Turkey


100 g/4 oz onions, peeled and sliced
1 tablespoon sunflower oil
1 tablespoon curry powder 350 g/1.2 oz turkey pieces 450 ml/3/1 pint chicken stock
1 tablespoon lime juice
1/2 tablespoon cornflour (optional)


Gently fry the onion in the oil for 5 ntinutes. Stir in the curry powder and cook for a few minutes.


Add the turkey pieces and cook until browned. Stir in the chicken stock and lime juice and simmer for about 30 minutes until the turkey is tender. Skim off any fat.


If necessary, thickets with the cornflour mixed with a little of the liquid). Serve with plain boiled rice as an accompaniment.
