Chicken With Peppers
350 g/12 oz cooked chicken meat
1 large green pepper, cored, deseeded and sliced
1 large red pepper, cored, deseeded and sliced
1 medium avocado, peeled, stoned and chopped
2 tablespoons reduced-caloric mayonnaise
Cut the chicken meat into bite-sized pieces. Blanch the peppers in boiling water for 1 minute.
Mix the pepper, avocado and chicken together then stir in the mayonnaise. Serve with a green salad as an accompaniment.
