Chicken Liver Skewers
4 lean bacon rashers, derinded
225 g/8 oz chicken livers
salt
freshly ground black pepper
few drops of Tabasco
1 tablespoon polyunsaturated vegetable oil
Wipe the mushrooms but do not wash or peel them. Cut each bacon slice into 3 pieces. Cut each chicken liver in half.
Take 4 kebab skewers, thread I mushroom on each. Alternate bacon, chicken livers and mushrooms on each skewer, finishing with a mushroom. Sprinkle with salt, pepper and Tabasco, then brush with oil.
Grill under medium heat for 6 minutes, turning the skewers frequently until the bacon and livers are completely cooked. Serve hot with salad. SERVES 4
