Chicken In Foil
1 tablespoon soy sauce 1 tablespoon dry sherry
1 tablespoon sesame seed oil
450 g/1 lb boned chicken breast, cot into 16
equal pieces
4 spring onions, each cut into 4 pieces
1 x 5 cm/2 inch piece root ginger, peeled and
shredded
1 celery stalk, shredded
Mix the soy sauce, sherry and sesame seed oil together. Add the chicken and toss well to coat, then leave to marinate for 15 to 20 minutes.
Cut out 16 pieces of foil large enough to enclose the pieces of chicken generously. Brush the foil with oil, place a piece of chicken in the centre and top with a piece of spring onion, some ginger and celery. Fold the foil over to enclose the chicken and seal the edges well. Place in a steamer and steam for 10 to 12 minutes. Serve hot in the foil. SERVES 4 to 6
