Noodles With Cottage Cheese


175 g/6 oz wholemeal noodles
salt
freshly ground black pepper
150 g/5 oz cottage cheese
25 g/1 oz grated Parmesan cheese
25 g/1 oz polyunsaturated margarine
2 tablespoons chopped parsley
1 small onion, peeled and chopped
2 eggs, beaten


Cook the noodles in boiling, slightly salted water until soft (approximately 15 minutes). Strain and add the remaining ingredients, mixing well. Place the mixture in a lightly greased casserole and bake in a preheated moderately hot oven (190 °C/375 °F, Gas Mark 5) for 20 minutes.
