Herbed Chicken Pasta
100 g/4 oz shell pasta or macaroni
1 teaspoon chopped fresh oregano or 1/2 teaspoon
dried oregano
1 teaspoon chopped fresh rosemary or
Vz teaspoon dried rosemary
350 g/12 oz cooked chicken meat
100 g/4 oz mushrooms, chopped
1 tablespoon olive oil
1 teaspoon ground coriander
salt
freshly ground black pepper
Put the pasta into boiling salted water with the herbs and cook for about 10 minutes until tender but still firm.
Cut the chicken meat into bite-sized pieces. Add the chicken and mushrooms to the pasta and cook for a timber 10 minutes. Drain if necessary.
Add the olive oil and coriander. Add salt and pepper just before serving. Serve hot or cold. SERVES 2
