Veal With Garlic And Tomatoes
4 x 175 g/6 oz pieces fillet of veal
2 tomatoes, skinned and chopped
2 cloves garlic, peeled and crushed
1 celery stalk, finely chopped
salt
freshly ground black pepper
Put the veal fillets on pieces of foil large enough to enclose them. Mix together the tomatoes, garlic and celery, and spoon over the veal. Season with salt and pepper and then wrap the fillets in the foil.
Cook in a preheated hot oven (220 °C/425 °F, Gas Mark 7) for about 20 minutes or until the veal is tender. Serve immediately with a salad or seasonal vegetables.
