Sesame Lamb Balls
125 g/41/2 oz fresh spinach
100 g/4 oz feta cheese
500 g/11/4 lb minced lean lamb
1/2 bunch parsley, finely chopped
I onion, peeled and finely chopped
2 cloves garlic, peeled and finely chopped
4 tablespoons sesame seeds
1 egg
herb
salt
freshly ground black pepper
about 125 nil/4 fl oz sunflower oil
Pick over the spinach, remove any tough stalks and wash well. Shake dry and finely chop. Crush the cheese with a fork until smooth.
Mix the minced lamb with the spinach, parsley, onion, garlic, cheese, sesame seeds and egg. Season to taste with herb salt and pepper. Using wet hands, shape the mixture into walnut-sized balls.
Heat the oil a little at a time in a frying pan and fry the meat halls in batches over a moderate heat for about 8 minutes. Drain well on kitchen paper. Serve the balls very hot with a salad.
