Quick Fried Beef In Oyster Sauce
4 carrots, peeled
2 celery stalks
2 tablespoons polyunsaturated vegetable oil
4 spring onions, chopped
2 cloves garlic, peeled and sliced
350 g/12 oz rump or sirloin steak, trimmed
of fat
salt
100 g/4 oz bean-sprouts
1 tablespoon soy sauce
2 tablespoons dry sherry
.3 tablespoons oyster sauce
Garnish:
carrot flower, made by making V cuts along the
length of a trimmed, peeled carrot and then
cutting into slices
celery leaves
Slice the carrots and celery stalks diagonally.
Heat the oil in a wok or frying pan, add the spring onions and garlic and fry quickly for about 30 seconds. Add the carrots and celery and stir-fry for 1 minute.
Cut the steak into thin slices and sprinkle with salt. Add to the pan and fry until browned on all sides. Stir in the bean-sprouts, soy sauce, sherry and oyster sauce and cook for 2 minutes.
Spoon the mixture on to a serving dish and garnish with the carrot flower and celery leaves. SERVES 4 to 6
