Pork With Orange


4 x 100 g/4 or pork fillets, trimmed of fat
300 ml/1/2 pint unsweetened orange juice
12-20 juniper berries
salt
'freshly ground black pepper


Place the fillets in a dish and pour the orange juice over. Crush the juniper berries with rise back of a spoon and add to the orange juice with the salt and pepper. Cover and leave to marinate for 5 hours.


Remove the fillets and place under a preheated hot grill. Cook for 10 to 15 minutes, turning frequently and spooning over some of the orange marinade to prevent burning.


Strain the remaining orange marinade and pour into a saucepan. Bring to the boil and boil briskly to reduce slightly. Arrange the pork on a heated serving dish and pour the orange sauce over.
