Liver Kebabs
450 g/1 lb lambs' liver, cut into bite-sized pieces
4 onions, peeled and quartered
4 tomatoes, quartered
100 g/4 oz mushrooms
8 bay leaves
salt
freshly ground black pepper
lemon juice
Thread the liver pieces, onion, tomato, 'mushrooms and-bay leaves alternately on to 4 skewers. Sprinkle with salt and pepper.
Cook under a preheated hot grill for about 20 minutes, turning occasionally and spooning over the lemon juice to prevent burning.
