Braised Liver
450 g/1 lb chicken livers or lambs' liver, cut into
pieces
1 large cooking apple, cored and cut into chunks
50 g/2 oz onion, peeled and sliced
350 ml/12 fl oz tomato juice
2 teaspoons Worcestershire sauce
salt
freshly ground black pepper
Put the liver in a casserole dish. Add the apple and sliced onion. Pour in the tomato juice, Worcestershire sauce and add salt and pepper.
Cover and cook in a preheated moderate oven (180 °C/350 °F, Gas Mark 4) for about 30 minutes. Serve immediately while piping hot with potatoes and seasonal vegetables.
