Trout In Foil


1 carrot, peeled and finely chopped
few celery leaves, finely chopped
1 dessertspoon chopped parsley
1 clove garlic, peeled and finely chopped
15 g/I/2 oz butter
4 small trout, cleaned
salt
freshly ground black pepper


Mix the carrot, celery leaves, parsley and garlic together. Melt the butter in a pan and fry the mixture quickly for about 10 minutes until soft.


Place each trout on a piece of foil large enough to cover the fish completely, and season with salt and pepper. I )ivide the carrot mixture into 4 and spoon a portion over each fish.


Wrap the fish in foil, tucking the ends in firmly. Bake in a preheated moderately hot oven (190 °C/375 ° F, Gas Mark 5) for about 20 minutes until tender. Serve the trout in the fbil parcels. SERVES 4
