Swedish Baked Fish


4 halibut fillets
1 onion, peeled and sliced
4 tablespoons chopped parsley
450 ml/3/4 pint tomato juice
salt
freshly ground black pepper


Put the fish in a greased baking dish. Arrange the onion slices on top and sprinkle with half the parsley. Pour on the tomato juice, season well with salt and pepper, then cover with a large sheet of aluminium foil.


Bake in a preheated moderately hot oven (200 °C/400 °F, Gas Mark 6) for 30 minutes or until the fish is cooked. Sprinkle with the remaining parsley and serve hot.
