Sole Veronica
4 x 100 g/4 oz sole fillets
250 nil/8 fl oz white grape juice
salt
freshly ground black pepper
40 white grapes, deseeded
Put the sole in a wide shallow pan and pour over the grape juice. Season with salt and pepper. Simmer for about 15 minutes until the fish is tender.
Add the grapes and cook for a further 5 minutes.
Place the fish on a heated serving dish and pour the sauce and grapes over.
