Smoked Cod Jumble


225 g/8 oz wholemeal macaroni
25 g/l oz polyunsaturated margarine
3 tablespoons skimmed milk
350 g/12 oz smoked cod or haddock fillets,
skinned and cut into 2.5 cm /1 inch cubes
4 tomatoes, skinned and chopped
6 spring onions. trimmed and chopped
salt
freshly ground black pepper


Cook the macaroni for 10 to 15 minutes in plenty of boiling, slightly salted water. Drain well.


Melt the margarine in a saucepan. Add the milk and fish, then cover and cook very gently for I() minutes, or until the fish is tender. Remove the lid, add the cooked macaroni, tomatoes and spring onions. Season with salt and pepper. Stir the mixture lightly to avoid breaking tip the fish, and reheat well.
