Salmon Bake
350 g/12 oz cooked or canned salmon
2 eggs
350 ml/12 fl oz skimmed milk
50 g/2 oz Cheddar cheese, grated
salt
freshly ground black pepper
Flake the salmon with a fork, discarding the bones, and place in a casserole dish.
Beat together the eggs and milk, then stir in the cheese, salt and pepper. Pour over the salmon and bake in a preheated moderate oven (180 °C/350 °F, Gas Mark 4) for about 20 minutes or until set.
