Pineapple Halibut
4 x 100 g/4 oz halibut steaks
250 ml/8 fl oz unsweetened pineapple juice
2 teaspoons cornflour
1 tablespoon water
salt
freshly ground black pepper
Put the halibut steaks in a wide shallow pan and add the pineapple juice. Simmer for about 15 minutes until the fish is tender. Place the fish on a heated serving dish and keep warm.
Blend the cornflour with the water and add to the pineapple juice. Cook for 3 minutes. Add a little more pineapple juice if the sauce is too thick
