Monk Mackarel
4 medium mackerel, cleaned
2 onions, peeled and chopped
2 bay leaves
4 tablespoons lent on juice
2 teaspoons dried utixcd herbs
12 black olives, stoned
salt
freshly ground black pepper
Garnish:
watercress sprigs
lemon wedges
Place the mackerel in a non-stick baking dish and cover with the onions, bay leaves, lemon juice, herbs and stoned olives. Season with salt and pepper. Cover with foil and bake in a preheated moderate oven (180 °C/350 °F, Gas Mark 4) for 30 to 40 minutes or until the fish is cooked. Serve hot, garnished with the watercress sprigs and lemon wedges.
