Mackarel Fish Cakes
350 g/I2 oz cooked or canned mackerel
350 g/12 oz cooked potatoes
1 tablespoon curry powder
salt
freshly ground black pepper
polyunsaturated vegetable oil
If using canned mackerel. drain well. Mash the fish and potatoes together using a fork and potato masher. Mix in the curry powder and salt and pepper to taste.
Cover the grill rack with foil and brush or spray with oil.
Shape the mixture into 12 fish cakes and place under a hot grill. Cook for about 5 minutes on each side until browned.
