Hot Prawn Curry


25 g/1 oz polyunsaturated margarine
1 small onion, peeled and chopped
1 teaspoon curry powder
2 teaspoons flour
150 ml/1/4 pint plain low-fat yogurt
1 small dessert apple, cored and chopped
225 g/8 oz cooked, peeled prawns
2 tomatoes, skinned, &seeded and chopped
salt
freshly ground black pepper
lemon wedges, to garnish


Melt the margarine in a pan, add the onion and fry gently for 3 minutes until soft and golden, stirring occasionally. Stir in the curry powder and flour and cook for 2 minutes.


Remove from the heat and stir in the yogurt, apple and prawns. Return to the heat and cook gently for 5 minutes.


Add the tomatoes to the pan and continue cooking for 3 minutes. Add salt and pepper to taste. Garnish with lemon wedges and serve hot, with brown rice.
