Fish In A Packet


450 g/I lb cod fillets
2 tablespoons polyunsaturated vegetable oil
2 tablespoons lemon juice
salt
freshly ground black pepper
2 tomatoes, sliced
4 fennel sprigs


Cut the fish into 4 pieces. Cut out 4 x 30 cm/ 12 inch squares of foil and brush them liberally with oil. Place one piece of fish on each square of toil, then sprinkle with the remaining oil, the lemon juice and salt and pepper to taste. Place 2 tomato slices on each piece of fish, then top each with a fennel sprig.


Fold the foil around each fish to form a parcel, then place the parcels on a baking sheet. Bake in a preheated moderate oven (180 °C/350 °E, Gas Mark 4) for 30 minutes.


Unwrap each parcel carefully, lift the fish out on to warmed serving plates, pour over the cooking juices and serve hot.
