Devilled Fish


4 x 1(X) g/4 oz pieces coley or cod
120 nil/4 fl oz lemon juice
2 teaspoons Worcestershire sauce
1 teaspoon French mustard
I teaspoon light brown sugar
salt
freshly ground black pepper


Place the fish in a casserole dish. Mix together the remaining ingredients, adding salt and pepper to taste, and pour them over the fish.


Cover and cook in a preheated moderately hot oven (190 °C/375'F, Gas Mark 5) for about 20 minutes or until the fish is tender.
