Cold Curried Prawns


450 g/ I lb cooked, peeled prawns
Sauce:
4 tablespoons sunflower oil
4 teaspoons curry paste
8 tablespoons wine vinegar
pinch of salt


Put the prawns in a shallow dish.


Mix the sunflower oil, curry paste and wine vinegar together. Add a pinch of salt, unless the prawns are already salty.


Pour the sauce over the prawns and leave to marinate for 1 hour in a cool place, turning frequently. Serve the prawns in the sauce. SERVES 4
