Cod And Bean Pie
175 g/b oz haricot beans, soaked overnight in
cold water
2 medium onions, peeled and chopped
1 kg/2 lb cod or other white fish fillets, skinned
and cut into small pieces
4 rashers lean bacon, derinded and cut into
strips
salt
freshly ground black pepper
pinch of dried thyme
pinch of dried marjoram
600 011/1 pint skimmed milk or milk and
fish stock, mixed
450 g/I lb potatoes, peeled and very thinly sliced
Drain the haricot beans, cover with fresh cold water and bring to the boil. Simmer for 11/2 hours or mini tender, then drain.
Put the onions into a greased casserole and cover with the fish and strips of bacon. Season to. taste and add the herbs. Add a layer of cooked beaus and pour in the milk or milk and stock. Top with the Potatoes which should overlap and be arranged to form an attractive crust. Bake in a preheated moderate oven (180"C/350 °F, Gas Mark 4) for about 40 minutes or until the potatoes arc cooked and golden brown.
