Chinese Plaice
8 medium plaice fillets
3 tablespoons apple juice
1 tablespoon soy sauce
Stuffing:
75 g/3 oz fresh wholemeal breaderumbs
1-2 cloves garlic, peeled and crushed
1 small onion, peeled and grated
50 g/2 oz ground almonds
1/2 tablespoon ground ginger
3 tablespoons apple juice
1 tablespoon soy sauce
freshly ground black pepper
Garnish:
chervil leaves
diamonds of red pepper
Heat the oven to 180 °C/350 °F, Gas Mark 4. In a bowl, blend together the stuffing ingredients.
Remove any dark skin from the plaice and lay all the fillets, flesh side down, on a board. Divide the stuffing between them and roll up. Secure with cocktail sticks.
Place them in a shallow, greased ovenproof dish, packing close together. Mix together the apple juice and soy sauce and pour over the plaice.. Cover the dish with foil and cook in the oven for 30 minutes.
Serve hot, garnished with chervil leaves and red pepper diamonds.
