Oven Baked Tomato Toasts
5 eggs
3 tablespoons skimmed milk
few drops of Worcestershire sauce
salt
freshly ground black pepper
50 g/2 oz Bran Flakes breakfast cereal, crushed
4 slices wholemeal bread
4 small tomatoes, sliced
polyunsaturated vegetable oil for frying
Beat 1 egg with the milk, Worcestershire sauce, salt and pepper. Place the crushed Bran Flakes on a plate. Remove the crusts from the bread and cut each slice in half.
Dip the bread into the egg mixture and then into the crumbs, coating evenly. Place the bread in an ovenproof serving dish and arrange the tomato slices on top.
Bake in a moderately hot oven (190 °C/375 °F, Gas Mark 5) for 15 minutes. While the bread is baking, fry the remaining 4 eggs in a little oil. Top each slice of bread with a fried egg and serve immediately while hot.
