Mixed Cheese With Herbs
175 g/6 oz curd cheese
25 g/1 oz Gruyere cheese, grated
25 g/1 oz Parmesan cheese, grated
pinch of mustard powder
salt
freshly ground black pepper
pinch of cayenne pepper
4-6 tablespoons chopped bullet or chervil
Mash the soft cheese until smooth, then beat in the two grated hard cheeses. Add a pinch of mustard and season with salt and black pepper. Stir in a pinch of cayenne pepper, then chill for 2 hours until firm.
Form the cheese into halls and roll each one in the chopped herb. Lay them on a small flat plate and serve with warm water biscuits.
