Courgette Quiche


wholemeal pastry made with 175 g/6 oz flour
2 tablespoons polyunsaturated vegetable oil
2 onions, peeled and sliced
450 el lb courgettes, sliced
salt
freshly ground black pepper
2 eggs, beaten with 150 ml/1/4 pint milk
2 tablespoons grated Parmesan cheese


Roll out the pastry dough on a lightly floured surface and use to line a 20cm/8inch Han dish or flan ring, placed on a baking sheet. Prick the base tightly with a fork, cover with foil, then weigh clown with baking beans or rice.


Bake in a preheated moderately hot oven (200C/400 °F, Gas Mark 6) for 15 minutes. Refriove the beans or rice and the foil, return the flan base to the oven and bake for a further 5 minutes.


Meanwhile, make the filling: heat the oil in a frying pan. Add the onions and courgettes and fry gently for about 10 minutes until lightly browned, ;tiff* occasionally.


Remove the onions and courgettes from the ,,,an with a slotted spoon, then place in the Han base. Add salt and pepper to taste to the egg and Milk mixture, then pour into the flan case. , €ž,/,prinkle with the Parmesan cheese.


Bake in a preheated moderately hot oven 190 °C/375 ° F, Gas Mark 5) for 25 to 30 minutes


the filling is set and lightly browned on top. l':erve hot or cold.
