Cottage Cheese Griddle Cakes


25 g/1 oz polyunsaturated margarine, melted
100 g/4 oz cottage cheese
2 eggs, beaten
50 g/2 or wholemeal self-raising flour
1 tablespoon skimmed milk


Put the margarine and cottage cheese in a bowl and mix well. Beat in the eggs, then stir in the flour and milk and beat to a smooth thick batter.


Grease a griddle or heavy-based frying pan very lightly with fat, then heat until very hot. Drop tablespoonfuls of the batter on to the hot surface. Cook for 1 minute until just set, then turn over and cook for a further 1 minute. Turn over again and continue cooking until the griddle cakes arc set and golden in colour.


Transfer to a wire rack and cover with a clean cloth to keep hot while cooking the remaining batter. Serve hot with honey or a savoury spread. MAKES 10 to 12
