Cottage Cheese Dip


450 g/1 lb cottage cheese
1 teaspoon caraway seeds
1/2 green pepper, cored, deseeded and finely
chopped
2 tablespoons finely chopped watercress
1/2 teaspoon salt
freshly ground black pepper
1 clove garlic, peeled and crushed (optional)
1/2 teaspoon paprika, to garnish


If a smoother clip is preferred, sieve the cottage cheese or work in a blender.


Blend together the cottage cheese, caraway seeds, green pepper, watercress, salt, pepper and garlic (if using). Pile the dip into a serving bowl and sprinkle with paprika. Serve with crisp sticks of carrot, celery and cucumber, cauliflower florets or bread sticks.


SERVES 10 to 12
