Cottage Bake
1 tablespoon polyunsaturated vegetable oil
1 small onion, peeled and finely chopped
100 g/4 or mushrooms, wiped and sliced
225 g/8 oz cottage cheese
2 eggs
50 g/2 or cooked lean ham, chopped
2 tablespoons chopped mixed fresh herbs
salt
freshly ground black pepper
chopped parsley, to garnish
Heat the oil in a pan, add the onion and fry gently until soft and golden. Add the mushrooms and fry for a further 3 minutes.
Meanwhile, put the cottage cheese and eggs in a bowl and beat together with a fork. Stir in the ham, then the cooked onion and mushrooms. Add the herbs and salt and pepper to taste.
Spoon the mixture into a lightly oiled baking dish, then bake in a preheated moderately hot oven (200 °C/400 °F, Gas Mark 6) for 20 minutes. Sprinkle with chopped parsley and serve hot.
