Cheese Thins


100 g/4 oz rolled oats
1/2 teaspoon mustard powder
Vs teaspoon cayenne pepper
50 g/2 oz polyunsaturated margarine
75 g/3 oz Cheddar cheese, grated
1/4 teaspoon bicarbonate of soda
2 tablespoons boiling water


Mix together the rolled oats, mustard and cayenne. Rub in the margarine, then stir in the grated cheese. Dissolve the soda in the boiling water and pour over the dry ingredients. Mix to a stiff consistency, adding a little extra water if necessary.


Turn out on to a floured board and knead lightly. Roll out the mixture until it is about 5 mm/1/4 inch thick. Cut into rounds using a 7 cm/21/2-3 inch biscuit cutter.


Transfer the rounds to a greased baking sheet and bake in a preheated moderately hot oven (190 °C/375T, Gas Mark 5) for about 10 minutes or until golden. Transfer to a wire rack to cool. MAKES about 20
