Cheese Pots
1 celery stalk, diced
1 large ripe dessert pear, peeled, cored and diced
1 large dessert apple, peeled, cored and diced
1/2-1 teaspoon snipped chives
1/2-1 tablespoon lemon juice
225 g/8 oz Lancashire or crumbly Cheddar
cheese
Garnish:
1 tablespoon chopped parsley
paprika
Toss the celery, pear and apple dice with the chives and lemon juice.
Divide the mixture between 4 individual flameproof or ovenproof dishes. You should use flameproof dishes if heating under the grill. Crumble the cheese over the fruit and celery. Place under a preheated grill for 5 to 6 minutes or until golden brown on top or towards the top of a preheated hot oven (220 °C/425 °F, Gas Mark 7) for 10 minutes.
Garnish with the parsley and a sprinkling of paprika.
