Yogurt Wholemeal Scones
225 g/8 oz plain wholemeal flour
1/2 teaspoon salt
11/2 teaspoons baking powder
25 g/l oz polyunsaturated margarine
150 ml/1/4 pint plain low-fat yogurt
Put the flour, salt and baking powder in a bowl and stir well to mix. Rub in the margarine, then stir in the yogurt and mix to a soft dough.
Turn out on to a lightly floured surface and knead lightly for 30 seconds. Roll out to 2 cm/ Y.; inch thickness, cut out 10 rounds with a 5 cut/2 inch biscuit cutter and place on a greased baking sheet.
Bake in a preheated moderately hot oven (200 °C/400 °F, Gas Mark 6) for 12 minutes. Transfer to a wire rack and leave to cool. Serve with honey or a low-fat cheese spread.
