Wholemeal Pizza Dough


1 teaspoon light soft brown sugar
150 ml/1/4 pint lukewarm water
1 teaspoon dried yeast
100 g/4 oz plain wholemeal flour
100 g/4 oz strong white flour
1 teaspoon salt
2 teaspoons polyunsaturated vegetable oil


Dissolve the sugar in the water. Sprinkle over the yeast. Leave in a warns placeuntil frothy. Mix the flours and the salt in a bowl. Add the yeast liquid and the oil. Mix to a soft dough, then turn on to a floured surface and knead for 5 minutes. Replace in the bowl and cover with a clean cloth. Leave to rise in a warm place for 30 minutes or until doubled in size.


Knead the risen dough briefly, then roll out and use according to the recipe.


MAKES a 20 an/8 null diameter pizza
