Wholemeal Cheese Pastry


175 g/6 oz plain wholemeal flour
pinch of salt
1/2 teaspoon mustard powder
pinch of cayenne pepper
75 g/3 oz polyunsaturated margarine
75 g/3 oz Cheddar cheese, finely grated
2 tablespoons cold water


Mix together the flour, salt, mustard and cayenne in a large mixing bowl. Rub in the margarine until the mixture resembles breadcrumbs. Mix in the grated cheese. Add the water and, using a knife, cut the mixture until it conies together to form a dough. Use your hands to knead lightly.


Chill for 30 minutes before using for pies, pasties or to line savoury flan cakes.


MAKES 175g/6 oz quantity
