Wholemeal And Potato Pastry


75 g/3 oz plain wholemeal flour
40 g/11/2 oz polyunsaturated margarine
50 g/2 oz cold mashed potato
1 tablespoon ice-cold water


Put the Hour in a bowl. Add the margarine and rub into the flour until the mixture resembles breadcrumbs. Stir in the potato and then the water. Knead to a firm dough.


Turn on to a lightly floured surface, roll out and use according to the recipe.


MAKES sufficient to line one 20 an/8 inch flan ring
