Walnut Squares
1 egg, beaten
225 g/8 oz Muscovado sugar
75 g/3 oz plain wholemeal flour
1 teaspoon bicarbonate of soda
1/4 teaspoon salt
100 g/4 oz walnuts, finely chopped
Put the egg and sugar in a bowl and mix well. Mix the flour, soda and salt together, then stir into the egg mixture. Stir in the nuts.
Spread the mixture in a greased 20 cm/8 inch square till. Bake in a preheated moderate oven (180 °C/350 °F, Gas Mark 4) for 20 minutes. Leave to cool in the tin, then cut into squares before serving.
