Sultana Spice Biscuits


100 g/4 oz polyunsaturated margarine
175 g/6 oz light soft brown sugar
50 g/2 oz mashed potato, sieved
175 g/6 oz plain wholemeal flour
50 g/2 oz sultanas
1 teaspoon mixed spice
Topping:
1 tablespoon caster sugar
1/2 teaspoon mixed spice


Cream together the margarine and sugar until smooth and fluffy, then beat in the potato. Add the flour, sultanas and spice and mix well.


Turn on to a lightly floured surface and roll out to a 5 min/1/4 inch thickness. Using a 7 cm/3 inch cutter, cut out rounds and place them on greased baking sheets.


Bake in a preheated moderate oven (180 °C/ 350 °F, Gas Mark 4) for 15 to 20 minutes until golden brown. Mix together the sugar and spice and sprinkle over the hot biscuits. Transfer to a Wire rack and allow to cool.
