Sesame Snaps


175 g/6 oz medium oatmeal
50 g/2 oz sesame seeds, toasted
6 tablespoons clear honey
6 tablespoons polyunsaturated vegetable oil
50 g/2 oz Muscovado sugar


Place all the ingredients in a bowl and mix thoroughly. Press into a greased 20 x 30 cm/8 x 12 inch Swiss roll tin and smooth the top.


Bake in a preheated moderate oven (180 °C/ 350 °F, Gas Mark 4) for 20 to 25 minutes. Cool in the tin for 2 minutes, then cut into 24 squares. Cool completely before removing from the tin. MAKES 24
